Garri production line and the main garri processing machine

Gari is one of many different kinds of food products that can be produced from fresh cassava roots. Gari is dry, crispy, creamy-white and granular. It is made from cassava roots that have been crushed into a mash, fermented and sieved into small pieces (known as grits). The grits are then roasted or fried to make the final crispy product. Gari is a popular food in West Africa and is fast becoming a marketable product.  

Here is the description of gari production line

Step 1: Cassava washing and peeling:  Cassava peeling involves removing the outer brown layer of cassava tubers to expose the white/yellow flesh. However, peeling machines reduce waste, saves time and labour, and does more work in a short time; it can peel up to 2,500kg of cassava in an hour while manual peeling can only process 20kg.

Step 2: Grating roots into mash  : This machine grinds the peeled and washed cassava tubers into a pulp or mash and can often process up to 4 tons of raw cassava in one day.

Step 3: De-watering and fermenting mash into wet cake  

This machine comes with a 30-ton hydraulic jack and does an easy job of squeezing all the water out of the mashed cassava.

Step 4: Sieving wet cake into grits and roasting grits into gari  

Then, using a wide frying pan, fry the powder in reasonable portions until it becomes  dry and crispy product .

Step 5: Bagging and storing the gari
